# Expert Advice:

01 -
  • Each sandwich is a bite of buttery croissant wrapped around bright, fresh flavors—so much more fun than plain bread.
  • It’s my solution whenever I want to impress, but not stress (it comes together in under 10 minutes, promise).
02 -
  • Don’t use cold goat cheese—I learned the hard way that it tears up delicate croissants instead of spreading smoothly.
  • If assembling ahead, just wait to add the arugula so it stays perky and fresh (I didn’t, and ended up with wilted greens once!).
03 -
  • Briefly toasting the croissant boosts both its flavor and its strength—less risk of soggy sandwiches.
  • A sprinkle of sea salt over the apple brings out its brightness and keeps the dish from tasting too sweet.
